Description

A nutritious and vibrant quinoa and black bean salad, perfect for any meal with a blend of flavors and health benefits.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 cup corn (frozen or fresh)
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. Combine the rinsed quinoa and water in a pot. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes, or until all the water is absorbed.
  3. Fluff the quinoa with a fork and let it cool.
  4. Combine the black beans, diced red bell pepper, corn, and chopped cilantro in a large bowl.
  5. Add the cooled quinoa to the vegetable mixture.
  6. Drizzle lime juice over the salad and season with salt and pepper to taste. Toss everything together until well mixed.

Notes

Garnish with additional herbs or a sprinkle of feta cheese; pairs well with grilled chicken or fish.
