Description

Walking Tacos are a fun and easy way to enjoy a classic taco dish right in a bag of corn chips, perfect for parties and quick dinners.


Ingredients

  • 1 teaspoon olive oil
  • 1 pound lean ground beef
  • 1.25 ounce taco seasoning
  • 1/4 teaspoon pepper
  • 1 (10 ounce) can diced tomatoes with green chilis
  • 1 (15 ounce) can Ranch Style beans
  • 6 (1 ounce) packages corn chips
  • Shredded cheese
  • Sour cream
  • Sliced green onions, for serving

Instructions

  1. Heat the olive oil over medium heat in a large skillet.
  2. Add the ground beef and cook for 6 – 8 minutes or until no longer pink, breaking it into crumbles. Drain if necessary.
  3. Stir in the taco seasoning mix, pepper, diced tomatoes, and beans.
  4. Bring the mixture to a boil; simmer uncovered for 20 minutes or until it thickens, stirring occasionally.
  5. Open the corn chip bags just before serving. Add the beef mixture and desired toppings. Serve immediately.

Notes

Consider adding black olives or jalapeños for extra flavor. Use different types of cheese for variety.
