Description

A creamy and crunchy potato salad that’s perfect for any gathering.


Ingredients

  • 2 lbs potatoes, peeled and diced
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup celery, chopped
  • 1/2 cup red onion, chopped
  • 3 hard-boiled eggs, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
  2. In a large bowl, mix together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  3. Add the cooled potatoes, celery, red onion, hard-boiled eggs, and parsley to the dressing.
  4. Gently stir until the potatoes are well coated.
  5. Refrigerate for at least 1 hour before serving.

Notes
