Ingredients

- 2 lbs potatoes, peeled and diced
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup celery, chopped
- 1/2 cup red onion, chopped
- 3 hard-boiled eggs, chopped
- 1/4 cup fresh parsley, chopped
Instructions
- Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
- In a large bowl, mix together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Add the cooled potatoes, celery, red onion, hard-boiled eggs, and parsley to the dressing.
- Gently stir until the potatoes are well coated.
- Refrigerate for at least 1 hour before serving.
Notes
For extra flavor, let your salad chill in the refrigerator for a few hours or overnight. Customize by adding diced pickles or bell peppers.
