Description

A creamy, colorful macaroni salad that’s perfect for picnics and gatherings.


Ingredients

  • 8 ounces elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1 cup peas (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions; drain and rinse with cold water.
  2. In a large bowl, combine the mayonnaise, apple cider vinegar, and mustard.
  3. Add the cooked macaroni, celery, red bell pepper, red onion, and peas (if using).
  4. Stir until all ingredients are mixed well.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 60 minutes before serving.
