- 8 ounces elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon mustard
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/2 cup diced red onion
- 1 cup peas (optional)
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package instructions; drain and rinse with cold water.
- In a large bowl, combine the mayonnaise, apple cider vinegar, and mustard.
- Add the cooked macaroni, celery, red bell pepper, red onion, and peas (if using).
- Stir until all ingredients are mixed well.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 60 minutes before serving.

For added flavor, consider chopped herbs like dill or chives. Leftovers can be used in sandwiches.
