Ingredients

  • 4 chicken leg quarters (or 1 whole chicken, cut into pieces)
  • 1 cup plain yogurt
  • 2 tablespoons tandoori masala (store-bought or homemade)
  • 1 tablespoon lemon juice
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder (adjust to taste)
  • 1 teaspoon salt (adjust to taste)
  • 2 tablespoons vegetable oil
  • Fresh cilantro or mint leaves for garnish
  • Lemon wedges for serving

Instructions

  1. In a large bowl, combine yogurt, tandoori masala, lemon juice, ginger-garlic paste, turmeric powder, ground coriander, garam masala, chili powder, salt, and vegetable oil. Mix well until smooth.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or overnight for deeper flavor).
  3. Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly distributed.
  4. Remove the marinated chicken from the refrigerator. Allow it to sit at room temperature for about 15 minutes before grilling.
  5. Place the chicken on the grill. Cook for about 15-20 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has a nice char.
  6. Baste the chicken with leftover marinade during the last few minutes of grilling for extra flavor.
  7. Ensure the chicken is cooked through by checking that the juices run clear when pierced.
  8. Once grilled, remove the chicken from the grill and let it rest for about 5 minutes to retain the juices.
  9. Sprinkle with fresh cilantro or mint leaves for added flavor and color.
  10. Arrange the Tandoori Chicken on a serving platter with lemon wedges for an extra zing.
