- 4 chicken leg quarters (or 1 whole chicken, cut into pieces)
- 1 cup plain yogurt
- 2 tablespoons tandoori masala (store-bought or homemade)
- 1 tablespoon lemon juice
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon salt (adjust to taste)
- 2 tablespoons vegetable oil
- Fresh cilantro or mint leaves for garnish
- Lemon wedges for serving
Instructions
- In a large bowl, combine yogurt, tandoori masala, lemon juice, ginger-garlic paste, turmeric powder, ground coriander, garam masala, chili powder, salt, and vegetable oil. Mix well until smooth.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or overnight for deeper flavor).
- Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly distributed.
- Remove the marinated chicken from the refrigerator. Allow it to sit at room temperature for about 15 minutes before grilling.
- Place the chicken on the grill. Cook for about 15-20 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken has a nice char.
- Baste the chicken with leftover marinade during the last few minutes of grilling for extra flavor.
- Ensure the chicken is cooked through by checking that the juices run clear when pierced.
- Once grilled, remove the chicken from the grill and let it rest for about 5 minutes to retain the juices.
- Sprinkle with fresh cilantro or mint leaves for added flavor and color.
- Arrange the Tandoori Chicken on a serving platter with lemon wedges for an extra zing.
