Description

A colorful dessert featuring a cookie base, cream cheese frosting, and fresh fruits, perfect for gatherings and summer parties.


Ingredients

  • 250 g (2 cups) all-purpose flour
  • 115 g (1/2 cup) unsalted butter, softened
  • 100 g (1/2 cup) sugar
  • 1 large egg
  • 5 g (1 tsp) baking powder
  • 2.5 g (1/2 tsp) vanilla extract
  • 240 g (1 cup) cream cheese
  • 100 g (1/2 cup) powdered sugar
  • 60 ml (1/4 cup) heavy cream
  • Fresh fruits like strawberries, blueberries, kiwi, and bananas

Instructions

  1. Preheat your oven to 180°C (350°F). In a bowl, cream together butter and sugar until light and fluffy, about 2-3 minutes.
  2. Add in the egg and vanilla extract, then mix until well combined.
  3. Whisk together flour and baking powder in a separate bowl.
  4. Gradually add the dry mix into the wet ingredients. Mix just until combined.
  5. Scoop the dough onto your greased pizza pan and press it evenly into the base.
  6. Bake for 8-10 minutes or until lightly golden around the edges.
  7. Beat together cream cheese and powdered sugar until smooth, then gradually add heavy cream until fluffy.
  8. Spread the cream cheese frosting evenly over the cooled crust.
  9. Arrange your choice of fresh fruits creatively on top.
  10. Slice the fruit pizza into wedges and serve immediately.

Store any leftovers in an airtight container for up to 3 days. The crust can be frozen for up to one month.
