Description

Ingredients

  • 1 cup orzo pasta
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • Fresh herbs (like parsley or basil) for garnish

Instructions

  1. Boil water in a pot. Add orzo and cook according to package instructions until al dente. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and mix well.
  5. Garnish with fresh herbs and serve chilled or at room temperature.
