- 1 ½ pounds boneless, skinless chicken thighs or breasts
- 1 cup long-grain white rice
- 1 cup chicken broth
- ½ cup honey BBQ sauce
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup bell peppers, diced (any color)
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil

Instructions
- Season the chicken thighs or breasts with salt, black pepper, and smoked paprika. Set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
- Push the onion and garlic to the side of the skillet. Add the seasoned chicken to the center of the pan. Sear the chicken for about 3-4 minutes on each side until golden brown.
- Stir in the rice and diced bell peppers, mixing well with the onion and chicken.
- Pour in the chicken broth and honey BBQ sauce. Stir to combine, ensuring the rice is evenly distributed.
- Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 20-25 minutes, or until the rice is tender and has absorbed the liquid.
- After the cooking time, check to ensure the chicken is fully cooked (internal temperature should reach 165°F). If the rice needs more liquid, add a splash of water or broth.
- Remove the skillet from heat and let it sit covered for 5 minutes to allow the flavors to meld.
- Remove the lid, fluff the rice with a fork, and sprinkle with fresh parsley before serving.
