  • 1 teaspoon smoked paprika
  • ½ teaspoon salt

Instructions

  1. Season the chicken thighs or breasts with salt, black pepper, and smoked paprika. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  3. Push the onion and garlic to the side of the skillet. Add the seasoned chicken to the center of the pan. Sear the chicken for about 3-4 minutes on each side until golden brown.
  4. Stir in the rice and diced bell peppers, mixing well with the onion and chicken.
  5. Pour in the chicken broth and honey BBQ sauce. Stir to combine, ensuring the rice is evenly distributed.
  6. Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 20-25 minutes, or until the rice is tender and has absorbed the liquid.
  7. After the cooking time, check to ensure the chicken is fully cooked (internal temperature should reach 165°F). If the rice needs more liquid, add a splash of water or broth.
  8. Remove the skillet from heat and let it sit covered for 5 minutes to allow the flavors to meld.
  9. Remove the lid, fluff the rice with a fork, and sprinkle with fresh parsley before serving.
