- 4 ears of corn
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 cup cotija cheese, crumbled
- 1 tsp chili powder
- 1 tsp lime juice
- Salt to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat your grill to medium heat.
- Grill the corn for 10-15 minutes, turning occasionally, until cooked through and slightly charred.
- Mix together the mayonnaise, sour cream, lime juice, and chili powder to create the sauce.
- Spread the mayo mixture over each ear of corn, then sprinkle with cotija cheese and salt.
- Garnish with cilantro if desired, and serve hot.
Notes
Adjust the chili powder according to spice preference. You can substitute mayonnaise with Greek yogurt for a lighter version.
