Description

Delicious Mexican street corn, elotes, served with a creamy sauce, cotija cheese, and chili powder.


Ingredients

  • 4 ears of corn
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup cotija cheese, crumbled
  • 1 tsp chili powder
  • 1 tsp lime juice
  • Salt to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your grill to medium heat.
  2. Grill the corn for 10-15 minutes, turning occasionally, until cooked through and slightly charred.
  3. Mix together the mayonnaise, sour cream, lime juice, and chili powder to create the sauce.
  4. Spread the mayo mixture over each ear of corn, then sprinkle with cotija cheese and salt.
  5. Garnish with cilantro if desired, and serve hot.

Notes

Adjust the chili powder according to spice preference. You can substitute mayonnaise with Greek yogurt for a lighter version.
