Description

A vibrant and refreshing salad that combines sweet corn with creamy mayonnaise and tangy lime, perfect for summer barbecues.


Ingredients

  • 4 cups fresh corn kernels
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, diced
  • 1/2 cup Cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Combine the corn, cilantro, and red onion in a large bowl.
  2. Whisk together the mayonnaise, lime juice, chili powder, salt, and pepper in a separate bowl.
