  • 1 cup unsalted butter, softened
  • 3½ cups granulated sugar, divided
  • 3 cups all-purpose flour, divided
  • ¼ teaspoon kosher salt
  • 8 large eggs, room temperature
  • 2 tablespoons lemon zest
  • 1 cup fresh lemon juice
  • Confectioners’ sugar, for dusting
  • Garnish: lemon zest

Instructions

  1. Preheat the oven to 350°F (180°C). Line a 13×9-inch metal baking pan with parchment paper.
  2. In a stand mixer, beat butter and ½ cup of granulated sugar at medium speed until creamy, about 3 to 4 minutes.
  3. In a medium bowl, whisk together 2 cups of flour and salt. Gradually add to the butter mixture, mixing until combined. Press the dough into the bottom of the prepared pan.
  4. Bake until lightly browned, about 15 minutes. Cool in the pan on a wire rack.
  5. In a large bowl, whisk together eggs, lemon zest, lemon juice, and remaining sugar. Add the remaining flour and mix well.
  6. Pour the filling onto the crust. Bake until set, about 25 to 30 minutes. Let cool completely; refrigerate for at least 4 hours before cutting into bars.
  7. Dust with confectioners’ sugar and garnish with lemon zest before serving.
