- 1 cup unsalted butter, softened
- 3½ cups granulated sugar, divided
- 3 cups all-purpose flour, divided
- ¼ teaspoon kosher salt
- 8 large eggs, room temperature
- 2 tablespoons lemon zest
- 1 cup fresh lemon juice
- Confectioners’ sugar, for dusting
- Garnish: lemon zest
Instructions
- Preheat the oven to 350°F (180°C). Line a 13×9-inch metal baking pan with parchment paper.
- In a stand mixer, beat butter and ½ cup of granulated sugar at medium speed until creamy, about 3 to 4 minutes.
- In a medium bowl, whisk together 2 cups of flour and salt. Gradually add to the butter mixture, mixing until combined. Press the dough into the bottom of the prepared pan.
- Bake until lightly browned, about 15 minutes. Cool in the pan on a wire rack.
- In a large bowl, whisk together eggs, lemon zest, lemon juice, and remaining sugar. Add the remaining flour and mix well.
- Pour the filling onto the crust. Bake until set, about 25 to 30 minutes. Let cool completely; refrigerate for at least 4 hours before cutting into bars.
- Dust with confectioners’ sugar and garnish with lemon zest before serving.
