Description

A tropical delight, this Juicy Pineapple Heaven Cake is a moist cake infused with sweet, tart pineapple and topped with a luscious cream cheese frosting.


Ingredients

  • 1 box yellow cake mix (450 g)
  • 1 can (20 oz / 567 g) crushed pineapple in juice
  • 3 large eggs
  • 1/2 cup (120 ml) vegetable oil
  • 1/2 cup (120 g) granulated sugar
  • 8 oz (226 g) cream cheese
  • 4 cups (480 g) powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C). Grease the two 9-inch round cake pans. In a bowl, combine the yellow cake mix and sugar. Mix well until evenly blended.
  2. Beat together the crushed pineapple (with juice), eggs, and vegetable oil until well combined.
  3. Add the wet mixture to the dry ingredients. Stir until just combined. Do not overmix – stop as soon as no dry flour is visible.
  4. Divide the batter evenly between the prepared pans. Bake for 25–30 minutes, or until golden brown and an internal temperature of 74°C (165°F) is reached. A toothpick should come out clean.
  5. Allow the cakes to cool in the pans for about 10 minutes. Then, transfer them to a cooling rack to cool completely.
  6. Beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  7. Frost the top of one layer with the cream cheese frosting. Place the second layer on top and frost the top and sides of the cake.

Notes

Ensure your cake pans are greased well to prevent sticking. You can bake the cake a day in advance and store it tightly wrapped. For smooth frosting, dip your spatula in warm water before smoothing.
