Description

A delightful blend of tangy cream cheese and sweet gingerbread spices, perfect for the holiday season.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup dark brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup brown sugar
  • 3 large eggs
  • 1/2 cup molasses
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

Instructions

  1. Prepare the pan by greasing a springform pan and setting up a water bath.
  2. Make the crust by mixing graham cracker crumbs, dark brown sugar, melted butter, and spices. Press into the pan.
  3. Beat the cream cheese until fluffy.
  4. Gradually mix in brown sugar, then add eggs one at a time, followed by molasses, sour cream, heavy cream, and vanilla extract.
  5. Add spices and cornstarch, blend smooth, and pour into the prepared crust.
  6. Bake in a water bath for 85 minutes.
  7. Cool for 10 minutes, then chill in the refrigerator for at least 6 hours.
  8. Prepare the whipped topping and frost when ready to serve.
