Description

A rich and hearty soup made with Italian sausage, tender potatoes, and creamy goodness, perfect for chilly nights.


Ingredients

  • 450 g Italian Sausage
  • 500 g Potatoes (diced)
  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 2 medium Carrots (diced)
  • 2 stalks Celery (diced)
  • 1.2 liters Chicken Broth
  • 240 ml Cream
  • Salt & Pepper (to taste)
  • Fresh Parsley (for garnish)

Instructions

  1. Prepare the vegetables by dicing the onion, carrots, and celery. Chop the potatoes into small, even pieces.
  2. Brown the sausage in a large pot over medium heat for 8-10 minutes until cooked through.
  3. Add the diced onions, garlic, carrots, and celery to the pot and cook for 5-7 minutes until the onions are translucent.
  4. Stir in the chopped potatoes and pour the chicken broth over the mixture. Bring to a gentle boil, then reduce heat and simmer covered for 20 minutes.
  5. Mix in the cream once the potatoes are fork-tender and simmer for another 5 minutes without boiling.
  6. Taste and adjust seasoning with salt and pepper. Ladle into bowls and garnish with fresh parsley before serving.

Notes

For a lighter soup, substitute cream with milk. This soup can be made ahead of time as flavors meld overnight.
