- 450 g Italian Sausage
- 500 g Potatoes (diced)
- 1 medium Onion (diced)
- 3 cloves Garlic (minced)
- 2 medium Carrots (diced)
- 2 stalks Celery (diced)
- 1.2 liters Chicken Broth
- 240 ml Cream
- Salt & Pepper (to taste)
- Fresh Parsley (for garnish)
Instructions
- Prepare the vegetables by dicing the onion, carrots, and celery. Chop the potatoes into small, even pieces.
- Brown the sausage in a large pot over medium heat for 8-10 minutes until cooked through.
- Add the diced onions, garlic, carrots, and celery to the pot and cook for 5-7 minutes until the onions are translucent.
- Stir in the chopped potatoes and pour the chicken broth over the mixture. Bring to a gentle boil, then reduce heat and simmer covered for 20 minutes.
- Mix in the cream once the potatoes are fork-tender and simmer for another 5 minutes without boiling.
- Taste and adjust seasoning with salt and pepper. Ladle into bowls and garnish with fresh parsley before serving.
Notes
For a lighter soup, substitute cream with milk. This soup can be made ahead of time as flavors meld overnight.
