Description

Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups potatoes, diced
  • 1 can (15 oz) beans (e.g., kidney or black beans), drained and rinsed
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain any excess fat.
  2. Add the chopped onion and minced garlic; sauté until softened.
  3. Stir in the diced potatoes, beans, and beef broth, then bring to a boil.
  4. Reduce heat and simmer for about 15-20 minutes, or until the potatoes are tender.
  5. Stir in the heavy cream, paprika, cumin, salt, and pepper; simmer for an additional 5 minutes.
  6. Serve hot, garnished with fresh parsley if desired.

Notes
