  • 1 pound boneless, skinless chicken breasts, cubed
  • 6 cups chicken broth
  • 2 cups fresh spinach
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables soften.
  3. Stir in minced garlic, thyme, and oregano. Cook for an additional minute until fragrant.
  4. Add the cubed chicken to the pot. Cook until the chicken is golden brown, about 5-7 minutes.
  5. Pour in the chicken broth, bringing the mixture to a boil.
  6. Reduce heat and let it simmer for 10 minutes to allow flavors to meld.
  7. Add the cheese tortellini to the pot. Cook according to package instructions, usually about 3-5 minutes.
  8. Stir in the fresh spinach and heavy cream until the spinach wilts and the soup is heated through.
  9. Taste the soup and adjust with salt and pepper as desired.
  10. Ladle the soup into bowls and garnish with chopped parsley.
