- 2 cups fresh spinach
- 1 package (9 ounces) refrigerated cheese tortellini
- 1 cup heavy cream

Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables soften.
- Stir in minced garlic, thyme, and oregano. Cook for an additional minute until fragrant.
- Add the cubed chicken to the pot. Cook until the chicken is golden brown, about 5-7 minutes.
- Pour in the chicken broth, bringing the mixture to a boil.
- Reduce heat and let it simmer for 10 minutes to allow flavors to meld.
- Add the cheese tortellini to the pot. Cook according to package instructions, usually about 3-5 minutes.
- Stir in the fresh spinach and heavy cream until the spinach wilts and the soup is heated through.
- Taste the soup and adjust with salt and pepper as desired.
- Ladle the soup into bowls and garnish with chopped parsley.
