A delightful twist on traditional French toast, these muffins are filled with cream cheese and strawberries, perfect for breakfast or brunch.

- 6 slices of bread
- 4 oz cream cheese, softened
- 1 cup strawberries, hulled and sliced
- 2 eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 cup sugar
- Butter for greasing the muffin tin
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin with butter.
- Beat the eggs in a mixing bowl, then add milk, vanilla extract, sugar, and cinnamon, and mix well.
- Cut the bread into cubes and gently fold them into the egg mixture until coated.
- Mix the softened cream cheese with sliced strawberries in another bowl.
- Place a layer of the bread mixture in each muffin cup, then add a layer of the cream cheese and strawberry mixture, and top with more bread mixture.
- Bake in the preheated oven for 20-25 minutes or until golden and set.
- Allow to cool for a few minutes before removing from the muffin tin. Serve warm.
Notes
Use day-old bread for better texture. Feel free to mix in other fruits like blueberries or raspberries for added flavor.
