  • 2 Cucumbers, chopped
  • 2 Bell Peppers, chopped
  • 1 Red Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 2 tablespoons Vinegar
  • Salt, to taste
  • Pepper, to taste
  • Crostini for topping
