Description

A refreshing soup made from fresh vegetables, perfect for hot weather.


Ingredients

  • 1 can Healthy Request Tomato Soup
  • 2 Cucumbers, chopped
  • 2 Bell Peppers, chopped
  • 1 Red Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 2 tablespoons Vinegar
  • Salt, to taste
  • Pepper, to taste
  • Crostini for topping

Instructions

  1. Combine Healthy Request Tomato Soup with chopped cucumbers, bell peppers, red onions, and minced garlic in a large bowl.
  2. Drizzle with olive oil and vinegar, and season with salt and pepper to taste.
  3. Blend until smooth or chunky, depending on your preference.
  4. Cover and chill in the refrigerator for at least 60 minutes to allow the flavors to develop.
  5. Serve chilled, topped with crispy crostini.
