Instructions
- In a large bowl, combine olive oil, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, minced garlic, lemon juice, salt, and pepper. Add yogurt if using.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to overnight for more flavor).
- Preheat your oven to 425°F (220°C).
- Place the marinated chicken on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until the chicken is cooked through and slightly charred.
- In a bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix until smooth. Adjust consistency with water if necessary.
- Once cooked, let the chicken rest for about 5 minutes before slicing.
- Cut the chicken into thin strips or bite-sized pieces.
- Place the sliced chicken in a wrap or on a plate with your choice of sides.
