Ingredients

  • 1 bunch Fresh cilantro
  • ¼ cup Olive oil
  • 1 cup Orange juice
  • ¼ cup Lime juice
  • 2 tablespoons Ancho chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground black pepper
  • 4 cloves Garlic (minced)
  • 1 each Jalapeno (diced, adjust for heat preference)
  • 2 pounds Skirt steak (trimmed of excess fat)

Instructions

  1. Whisk together all marinade ingredients, except for the steak, in a medium bowl.
  2. Pour the marinade into a large baking dish or freezer bag. Add the steak, turning or shaking to coat it well. Cover and refrigerate for at least 2 hours or up to 8 hours.
  3. Remove the steak from the marinade when you’re ready to cook and discard any leftover marinade.
  4. Let the steak sit at room temperature while heating the grill.
  5. Preheat the grill to high heat, aiming for 450°F-500°F.
  6. Grill the steak for 4 to 6 minutes on each side for medium-rare.
  7. Rest the steak for 5 minutes after grilling, then thinly slice against the grain before serving.
