Description

Classic Cannoli Squares are a delightful twist on the traditional cannoli. They feature a rich ricotta filling on a buttery crust, topped with chocolate and pistachios.


Ingredients

    • 1 cup all-purpose flour
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter (softened)
    • 1 egg yolk
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon salt
  • For the Filling
    • 2 cups ricotta cheese (drained)
    • 1 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1/2 cup mini chocolate chips
    • 1/4 cup chopped pistachios (optional, for topping)
  • For the Topping
    • Powdered sugar (for dusting)
    • Chocolate shavings (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a mixing bowl, combine the flour, granulated sugar, softened butter, egg yolk, vanilla extract, and salt. Mix until a dough forms.
  3. Press the dough evenly into the bottom of the prepared baking dish.
  4. Bake in the preheated oven for 15–20 minutes, or until lightly golden. Remove from the oven and let cool completely.
  5. In a large bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  6. Fold in the mini chocolate chips gently.
  7. Once the crust is completely cool, spread the ricotta filling evenly over the crust.
  8. Cover and refrigerate for at least 2 hours to allow the filling to set.
  9. Once chilled, cut the cannoli squares into even pieces.
  10. Dust with powdered sugar and top with chopped pistachios and chocolate shavings if desired.
  11. Serve chilled and enjoy.
