Classic Cannoli Squares are a delightful twist on the traditional cannoli. They feature a rich ricotta filling on a buttery crust, topped with chocolate and pistachios.

- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 1 egg yolk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- For the Filling
- 2 cups ricotta cheese (drained)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- 1/4 cup chopped pistachios (optional, for topping)
- For the Topping
- Powdered sugar (for dusting)
- Chocolate shavings (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- In a mixing bowl, combine the flour, granulated sugar, softened butter, egg yolk, vanilla extract, and salt. Mix until a dough forms.
- Press the dough evenly into the bottom of the prepared baking dish.
- Bake in the preheated oven for 15–20 minutes, or until lightly golden. Remove from the oven and let cool completely.
- In a large bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Fold in the mini chocolate chips gently.
- Once the crust is completely cool, spread the ricotta filling evenly over the crust.
- Cover and refrigerate for at least 2 hours to allow the filling to set.
- Once chilled, cut the cannoli squares into even pieces.
- Dust with powdered sugar and top with chopped pistachios and chocolate shavings if desired.
- Serve chilled and enjoy.
