Description

Sweet, sticky, and bright, these brown sugar honey glazed carrots melt on the tongue and shine on the plate.


Ingredients

Scale
  • 450 g (1 lb) carrots, sliced on the diagonal
  • 28 g (2 tbsp) unsalted butter
  • 28 g (2 tbsp) light brown sugar
  • 15 ml (1 tbsp) honey
  • 1530 ml (1–2 tbsp) water or orange juice
  • ¼ tsp kosher salt
  • Freshly ground black pepper, to taste
  • 1 tsp (5 ml) lemon juice (optional)
  • Fresh parsley or thyme (optional, for garnish)

Instructions

  1. Peel carrots and cut them into 1.3 cm (½ inch) thick diagonal slices.
  2. Bring a pot of salted water to a simmer and cook the carrots until tender, about 8–10 minutes. Drain and cool under cold water.
  3. In a skillet over medium heat, melt the butter, then add brown sugar, honey, and water or orange juice, stirring until the mixture thickens to a glossy syrup.
  4. Add the drained carrots to the skillet and toss to coat. Increase heat to medium-high and caramelize the edges for 3–4 minutes. Season with salt, pepper, and lemon juice if desired.
  5. Plate the carrots and garnish with parsley or thyme. Serve immediately.

Notes

For a vegan version, substitute olive oil for butter and use maple syrup instead of honey. This recipe is flexible and can be adjusted to taste.
