Ranch BLT Pasta Salad

Description

A delicious pasta salad that combines the classic flavors of a BLT sandwich with the creaminess of ranch dressing.


Ingredients

Scale
  • 8 ounces rotini pasta
  • 1 cup ranch dressing, divided
  • 1 cup diced tomatoes (cherry or grape tomatoes, halved)
  • 3/4 cup Swiss cheese, finely grated
  • 1/2 cup red onion, thinly sliced
  • 1 cup bacon, cooked crispy and chopped
  • 1 cup Romaine lettuce, roughly chopped
  • Salt and ground black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente in plenty of salted water. Drain well.
  2. Toss the warm pasta with ½ cup ranch dressing to lightly coat and prevent sticking. Refrigerate until completely cold, at least 30 minutes.
  3. Combine the cold pasta with tomatoes, Swiss cheese, red onion, bacon, and lettuce in a large bowl.
  4. Add the remaining ½ cup ranch dressing and gently toss to coat everything. Season to taste with salt and ground black pepper.
  5. Serve immediately and enjoy!

Notes

Store in an airtight container in the refrigerator. Best enjoyed within three days.
