Description

A delightful mix of crispy bacon, fresh tomatoes, and crunchy lettuce in a creamy dressing, perfect for gatherings or lunch.


Ingredients

  • 8 ounces of rotini pasta
  • 6 slices of bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 2 cups shredded Romaine lettuce
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to the package instructions. Drain and let it cool completely.
  2. Combine the cooled pasta, crumbled bacon, halved cherry tomatoes, and shredded Romaine lettuce in a large bowl.
  3. Mix the mayonnaise, apple cider vinegar, salt, and pepper in a separate small bowl.
  4. Pour the dressing over the pasta salad and toss until everything is well-coated.
  5. Chill the salad in the fridge for at least 30 minutes before serving.

Notes

Make sure the pasta is completely cooled before mixing to prevent wilting the lettuce. You can substitute turkey bacon for a healthier option.
