- 1 tbsp baking powder
- ½ tsp salt
- 60 g (½ cup) cold unsalted butter
- 1 large egg
- 240 ml (1 cup) mashed ripe bananas
- 100 g (1 cup) chocolate chips
Instructions
- Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined and fluffy.
- Cut in the Butter: Add the cold unsalted butter to the flour mixture. Using a pastry cutter or fork, cut the butter into the flour until the mixture resembles coarse crumbs.
- Mix in the Wet Ingredients: In a separate large bowl, combine the egg and mashed ripe bananas. Mix well, then pour this mixture into the dry ingredients. Stir gently until just combined.
- Fold in Chocolate Chips: Gently fold in the chocolate chips until evenly distributed throughout the dough.
- Shape the Scones: Turn the dough onto a floured surface and pat it into a circle about 2.5 cm (1 inch) thick. Cut into 8 wedges or use a cookie cutter.
- Bake the Scones: Preheat your oven to 200°C (400°F). Bake the scones for 15-20 minutes, or until golden brown.
Notes
Avoid overmixing the dough to prevent tough scones. You may prepare the dough a day in advance and keep it in the fridge.
