Description

A delicious and hearty vegetable lasagna packed with layers of flavors.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Sauté the zucchini and bell pepper in olive oil until soft.
  4. Mix the ricotta cheese with spinach, salt, and pepper.
  5. Layer in a baking dish: noodles, ricotta mixture, vegetables, marinara sauce, and mozzarella.
  6. Repeat layers, finishing with mozzarella on top.
  7. Bake for 45 minutes until golden and bubbly.
  8. Let it cool for 10 minutes before slicing.

Notes

Feel free to add any other vegetables you love! Serve with a side salad.
