- 1 medium zucchini, grated
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley

- 1 teaspoon dried oregano

- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Toothpicks or kitchen twine for securing
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the grated zucchini, feta cheese, parsley, garlic, oregano, salt, and pepper. Mix well to create the filling.
- Place the chicken breasts between two pieces of plastic wrap. Gently pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
- Spoon an equal amount of the filling onto each chicken breast. Roll the chicken tightly to enclose the filling and secure the ends with toothpicks or kitchen twine.
- In an oven-safe skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear them for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove the skillet from the oven and let the chicken rest for 5 minutes before removing the toothpicks or twine.
- Slice the stuffed chicken breasts in half to reveal the delicious filling. Serve warm.
