- 4 large onions (yellow or sweet)
- 4 cups vegetable broth
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika

- ½ teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Peel the onions and cut them in half from top to bottom.
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the vegetable broth and bring it to a simmer. Add the halved onions to the pot, cut side down.
- Stir in the soy sauce, smoked paprika, ground cumin, red pepper flakes, salt, and pepper.
- Cover the pot and let the onions boil for 20-25 minutes, or until they are tender and cooked through.
- Use a fork to check if the onions are soft. If they are not yet tender, simmer for an additional 5-10 minutes.
- Once cooked, remove the onions from the pot and place them on a serving platter. Drizzle with some of the broth from the pot.
- If desired, sprinkle fresh parsley over the onions for a pop of color and added flavor.
