- 6 cups cubed stale bread (preferably whole grain or sourdough)
- 2 cups almond milk (or any plant-based milk)
- 1/2 cup granulated sugar (or coconut sugar)
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 1 tablespoon vanilla extract
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup raisins or other dried fruits (optional)
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish with non-stick spray or a little coconut oil.
- If your bread isn’t stale, you can dry it out in the oven for about 10 minutes. Cut the bread into cubes and place them in a large mixing bowl.
- In a separate bowl, whisk together the almond milk, granulated sugar, maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, and salt until well combined.
- Pour the wet mixture over the cubed bread. Gently stir until all the bread pieces are soaked in the liquid.
- If using, fold in the raisins and chopped nuts for added texture and flavor.
- Spread the bread mixture evenly in the greased baking dish, pressing down slightly to ensure even cooking.
- Place the dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the pudding is set.
- Remove from the oven and let it cool for 10-15 minutes before serving. This cooling time helps the pudding firm up a bit.
