Ingredients

  • 125 ml orange juice
  • 250 grams olive oil
  • 50 grams honey
  • 80 ml water
  • 100 grams sugar
  • 1.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground clove
  • 0.33 teaspoon ground nutmeg
  • 0.25 teaspoon vanillin powder
  • 1 orange zested
  • 0.5 teaspoon baking soda
  • 125 grams fine semolina
  • 550 grams all-purpose flour
  • 1 teaspoon baking powder
  • 400 grams sugar for syrup
  • 100 grams honey for syrup
  • 325 ml water for syrup
  • 1 stick cinnamon for syrup
  • 45 dried cloves for syrup
  • 1 orange peel for syrup
  • Honey for drizzling
  • Ground walnuts for topping

Instructions

  1. In a large mixing bowl, add all of the cookie dough ingredients except the semolina, flour, and baking powder. Whisk until the sugar has fully dissolved.
  2. Gently stir in the fine semolina, allowing it to blend smoothly.
  3. In a separate bowl, whisk together the flour and baking powder. Gradually add this mixture to the wet ingredients.
  4. Use your hands to mix the dough for a few minutes until it becomes cohesive and smooth.
  5. Cover the bowl with a tea towel and let it rest for a little while.
  6. In a small saucepan, combine all syrup ingredients. Bring to a boil over high heat, and let it boil for four minutes once bubbling.
  7. Set your oven to 180°C (356°F) and line a tray with parchment paper.
  8. Take a portion of dough, roughly 40-45 grams, and roll it into a ball. Flatten it and place it on the prepared pan, maintaining a 3 cm space between cookies.
  9. Use a knife to create criss-cross patterns on the top of each cookie.
  10. Slide your pan into the preheated oven and bake for about 20 minutes, or until golden brown.
  11. Dip each cookie in the syrup using a draining spoon, ensuring each side is coated.
  12. Once cooled, serve the cookies drizzled with honey and topped with chopped walnuts.
