Ingredients

- 125 ml orange juice
- 250 grams olive oil
- 50 grams honey
- 80 ml water
- 100 grams sugar
- 1.5 teaspoon ground cinnamon
- 0.5 teaspoon ground clove
- 0.33 teaspoon ground nutmeg
- 0.25 teaspoon vanillin powder
- 1 orange zested
- 0.5 teaspoon baking soda
- 125 grams fine semolina
- 550 grams all-purpose flour
- 1 teaspoon baking powder
- 400 grams sugar for syrup
- 100 grams honey for syrup
- 325 ml water for syrup
- 1 stick cinnamon for syrup
- 4–5 dried cloves for syrup
- 1 orange peel for syrup
- Honey for drizzling
- Ground walnuts for topping
Instructions
- In a large mixing bowl, add all of the cookie dough ingredients except the semolina, flour, and baking powder. Whisk until the sugar has fully dissolved.
- Gently stir in the fine semolina, allowing it to blend smoothly.
- In a separate bowl, whisk together the flour and baking powder. Gradually add this mixture to the wet ingredients.
- Use your hands to mix the dough for a few minutes until it becomes cohesive and smooth.
- Cover the bowl with a tea towel and let it rest for a little while.
- In a small saucepan, combine all syrup ingredients. Bring to a boil over high heat, and let it boil for four minutes once bubbling.
- Set your oven to 180°C (356°F) and line a tray with parchment paper.
- Take a portion of dough, roughly 40-45 grams, and roll it into a ball. Flatten it and place it on the prepared pan, maintaining a 3 cm space between cookies.
- Use a knife to create criss-cross patterns on the top of each cookie.
- Slide your pan into the preheated oven and bake for about 20 minutes, or until golden brown.
- Dip each cookie in the syrup using a draining spoon, ensuring each side is coated.
- Once cooled, serve the cookies drizzled with honey and topped with chopped walnuts.
