Description

Traditional Chicken Potato Soup with Bacon is a hearty and comforting dish that combines tender chicken, creamy potatoes, and crispy bacon.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 slices of bacon, diced
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
  2. Add the chopped onion and garlic to the pot. Sauté for 3-4 minutes until softened.
  3. Place the chicken breasts in the pot. Pour in the chicken broth and bring to a boil.
  4. Once boiling, add the diced potatoes and dried thyme. Reduce the heat to a simmer and cover the pot.
  5. Allow the chicken and potatoes to cook for about 20 minutes, or until the chicken is fully cooked and the potatoes are tender.
  6. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  7. Stir in the heavy cream and let it simmer for an additional 5 minutes.
  8. Taste and season with salt and pepper as needed.
  9. Ladle the soup into bowls. Top with crispy bacon and fresh parsley for garnish if desired.

Notes

  • This soup can be stored in the refrigerator for up to 3 days.
  • For a thicker soup, you can mash some of the potatoes.
  • Feel free to add other vegetables such as carrots or celery.
