Description
Traditional Chicken Potato Soup with Bacon is a hearty and comforting dish that combines tender chicken, creamy potatoes, and crispy bacon.

- 1 pound boneless, skinless chicken breasts
- 4 slices of bacon, diced
- 4 medium potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 teaspoons dried thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
- Add the chopped onion and garlic to the pot. Sauté for 3-4 minutes until softened.
- Place the chicken breasts in the pot. Pour in the chicken broth and bring to a boil.
- Once boiling, add the diced potatoes and dried thyme. Reduce the heat to a simmer and cover the pot.
- Allow the chicken and potatoes to cook for about 20 minutes, or until the chicken is fully cooked and the potatoes are tender.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Stir in the heavy cream and let it simmer for an additional 5 minutes.
- Taste and season with salt and pepper as needed.
- Ladle the soup into bowls. Top with crispy bacon and fresh parsley for garnish if desired.
Notes
- This soup can be stored in the refrigerator for up to 3 days.
- For a thicker soup, you can mash some of the potatoes.
- Feel free to add other vegetables such as carrots or celery.
