- 1 whole chicken (about 4–5 pounds)
- 8 cups chicken broth
- 2 cups water
- 2 cups carrots, sliced
- 1 cup celery, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups egg noodles
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1/2 cup milk
- 1/4 cup fresh parsley, chopped (for garnish)
- Optional: additional seasonings (e.g., thyme, bay leaf, or rosemary)
Instructions
- In a large pot, add the whole chicken, chicken broth, and water. Bring to a boil over medium-high heat.
- Reduce heat and let the chicken simmer for about 30-40 minutes, or until fully cooked. Remove the chicken and set it aside to cool.
- In the same pot, add the diced onion, minced garlic, sliced carrots, and chopped celery. Sauté until the vegetables are tender, about 5-7 minutes.
- Once the chicken is cool enough to handle, remove the skin and bones. Shred the meat into bite-sized pieces and return it to the pot.
- Stir in the egg noodles and let them cook for about 8-10 minutes until they are tender.
- In a separate bowl, combine the flour, baking powder, salt, and black pepper. In another bowl, whisk together the eggs and milk. Combine the wet and dry ingredients to form a thick batter.
- Using a spoon, drop spoonfuls of the dumpling batter into the simmering soup. Cover the pot and let the dumplings steam for about 15 minutes without lifting the lid.
- Once the dumplings are cooked through, taste the soup and adjust seasoning as needed. Add fresh parsley for garnish.
- Ladle the soup into bowls, making sure to include dumplings and chicken in each serving.
