Description

Ingredients

  • 1 whole chicken (about 45 pounds)
  • 8 cups chicken broth
  • 2 cups water
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups egg noodles
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Optional: additional seasonings (e.g., thyme, bay leaf, or rosemary)

Instructions

  1. In a large pot, add the whole chicken, chicken broth, and water. Bring to a boil over medium-high heat.
  2. Reduce heat and let the chicken simmer for about 30-40 minutes, or until fully cooked. Remove the chicken and set it aside to cool.
  3. In the same pot, add the diced onion, minced garlic, sliced carrots, and chopped celery. Sauté until the vegetables are tender, about 5-7 minutes.
  4. Once the chicken is cool enough to handle, remove the skin and bones. Shred the meat into bite-sized pieces and return it to the pot.
  5. Stir in the egg noodles and let them cook for about 8-10 minutes until they are tender.
  6. In a separate bowl, combine the flour, baking powder, salt, and black pepper. In another bowl, whisk together the eggs and milk. Combine the wet and dry ingredients to form a thick batter.
  7. Using a spoon, drop spoonfuls of the dumpling batter into the simmering soup. Cover the pot and let the dumplings steam for about 15 minutes without lifting the lid.
  8. Once the dumplings are cooked through, taste the soup and adjust seasoning as needed. Add fresh parsley for garnish.
  9. Ladle the soup into bowls, making sure to include dumplings and chicken in each serving.
