  • 4 boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 2 tablespoons Thai red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • Vegetable oil, for frying
  • 4 brioche buns
  • 1 cup shredded lettuce
  • 1/2 cup sliced pickles
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha hot sauce
  • Lime wedges, for serving

Instructions

  1. In a large bowl, combine the buttermilk, Thai red curry paste, fish sauce, soy sauce, and sugar. Whisk together until the mixture is smooth and well mixed.
  2. Add the chicken thighs to the marinade, making sure they are fully submerged. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight to let the flavors fully develop.
  3. In a separate bowl, combine the all-purpose flour, cornstarch, baking powder, salt, garlic powder, and ground black pepper. Stir until the dry ingredients are evenly distributed.
  4. Remove the chicken from the marinade, allowing excess buttermilk to drip off. Thoroughly coat each piece in the flour mixture, pressing the mixture into the chicken to achieve a nice, crispy crust.
  5. Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C). Carefully place the coated chicken pieces into the hot oil and fry for 7-8 minutes, turning as needed, until golden brown and fully cooked through.
  6. While the chicken fries, mix together the mayonnaise and Sriracha hot sauce in a small bowl until well combined.
  7. Lightly toast the brioche buns until they are golden brown and slightly crisp.
  8. Spread spicy mayo on both the top and bottom halves of each toasted bun. Place one piece of fried chicken on the bottom bun, then layer shredded lettuce and sliced pickles on top. Cover with the top bun.
  9. Serve the sandwiches hot with lime wedges on the side for a refreshing citrus kick.
