- 1 lb lean ground beef (90/10 or 85/15)
- 1 tbsp soy sauce (low-sodium if needed)
- 1 tbsp hoisin sauce
- 1 cup shredded carrots
- 1/2 cup chopped bell peppers
- Fresh basil leaves (Thai basil preferred)
- Rice paper wrappers
Instructions
- Heat a skillet over medium-high heat and add the ground beef. Break it up with a spatula.
- When the beef is starting to brown, stir in the soy sauce and hoisin sauce. Continue cooking until fully browned and no pink remains (about 6–8 minutes). Drain excess fat if needed.
- Add the shredded carrots and chopped bell peppers to the skillet. Cook for 2–3 minutes until they soften slightly but stay crunchy.
- Fill a shallow bowl with warm water. Submerge a rice paper wrapper for 8–12 seconds until pliable, then lay it flat on a damp towel.
- Place a few spoonfuls of the beef-vegetable mixture in the center of the wrapper and top with 2–3 basil leaves. Fold the bottom over the filling, then fold the sides in, and roll tightly to seal.
- Repeat with remaining wrappers and filling. Serve immediately with your favorite dipping sauce.
