- For the Teriyaki Sauce:
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon garlic (minced)
- 1 teaspoon ginger (grated)
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- In a small saucepan, whisk together the soy sauce, brown sugar, rice vinegar, honey, minced garlic, and grated ginger.
- In a separate bowl, mix the cornstarch and water until smooth. Add this mixture to the saucepan and cook over medium heat, stirring constantly until the sauce thickens (about 3-5 minutes). Remove from heat and set aside.
- In a large skillet, heat the vegetable oil over medium-high heat.
- Season the chicken breasts with salt and pepper. Add them to the skillet and cook for about 6-7 minutes on each side, or until fully cooked and golden brown.
- Once the chicken is cooked, add the pineapple chunks to the skillet and pour the teriyaki sauce over the chicken.
- Cook for an additional 2-3 minutes, allowing the sauce to coat the chicken and pineapple, and heat through.
- Remove from heat and garnish with sliced green onions and sesame seeds if desired.
