- 1 pound smoked sausage, sliced
- 1 cup long-grain rice
- 1 can (15 oz) diced tomatoes, undrained
- 1 cup barbecue sauce
- 1 cup chicken broth
- 1 medium onion, diced
- 1 bell pepper, chopped (any color)
- 2 cloves garlic, minced
- 1 teaspoon paprika
- ½ teaspoon black pepper
- Salt to taste
- Chopped green onions for garnish (optional)
Instructions
- In a large skillet over medium heat, add the sliced smoked sausage. Cook until browned, about 5-7 minutes.
- Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté until the vegetables are soft, about 3-4 minutes.
- Stir in the long-grain rice, allowing it to toast slightly for about 1-2 minutes.
- Pour in the diced tomatoes, barbecue sauce, and chicken broth. Stir to combine everything evenly.
- Add paprika, black pepper, and salt to taste. Mix well.
- Bring the mixture to a boil. Once bubbling, reduce the heat to low and cover the skillet. Allow it to simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
- Once the rice is cooked, remove the skillet from heat. Let it sit for 5 minutes, then fluff the rice with a fork.
- Top with chopped green onions if desired, and serve hot.
