Ingredients

  • 1 pound smoked sausage, sliced
  • 1 cup long-grain rice
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 cup barbecue sauce
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 1 bell pepper, chopped (any color)
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Salt to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. In a large skillet over medium heat, add the sliced smoked sausage. Cook until browned, about 5-7 minutes.
  2. Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté until the vegetables are soft, about 3-4 minutes.
  3. Stir in the long-grain rice, allowing it to toast slightly for about 1-2 minutes.
  4. Pour in the diced tomatoes, barbecue sauce, and chicken broth. Stir to combine everything evenly.
  5. Add paprika, black pepper, and salt to taste. Mix well.
  6. Bring the mixture to a boil. Once bubbling, reduce the heat to low and cover the skillet. Allow it to simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
  7. Once the rice is cooked, remove the skillet from heat. Let it sit for 5 minutes, then fluff the rice with a fork.
  8. Top with chopped green onions if desired, and serve hot.
