Sweet and Savory Roasted Carrots with Honey Garlic Butter


Ingredients

  • 1 lb baby carrots (or regular carrots, peeled and cut into sticks)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 1/4 cup unsalted butter (melted)
  • 2 tablespoons honey
  • 3 cloves garlic (minced)
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1/2 teaspoon paprika (optional, for added flavor)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the baby carrots with olive oil, salt, and pepper until evenly coated.
  3. Spread the carrots in a single layer on the prepared baking sheet.
  4. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
  5. In a small bowl, whisk together the melted butter, honey, minced garlic, thyme, and paprika (if using) until well combined.
  6. Once the carrots are done roasting, remove them from the oven and drizzle the honey garlic butter over the top. Toss to coat the carrots evenly.
  7. Serve warm as a delicious side dish!
