A lively salad combining juicy citrus, creamy avocado, and crisp greens, designed for quick meals with vibrant flavors.
Ingredients
- Mixed greens (200 g / 7 oz; about 8 cups loosely packed)
- Oranges (2 medium, segmented; about 300 g / 10.5 oz total fruit)
- Avocado (1 large, ripe but firm)
- Cherry tomatoes (200 g / 7 oz; about 2 cups halved)
- Cucumber (1 medium, 150 g / 5 oz, sliced)
- Red onion (50 g / 1.75 oz; about ¼ small, thinly sliced)
- Feta cheese (100 g / 3.5 oz; crumbled)
- Kalamata olives (60 g / 2 oz; pitted and halved)
- Toasted sunflower seeds (60 g / ⅔ cup / 2 oz)
- Extra-virgin olive oil (60 ml / ¼ cup)
- Fresh lemon juice (30 ml / 2 tbsp)
- White wine vinegar (15 ml / 1 tbsp)
- Dijon mustard (5 g / 1 tsp)
- Honey (10 g / 2 tsp; or maple syrup for vegan)
- Diamond Crystal kosher salt (1 tsp)
- Freshly ground black pepper (¼ tsp)
Instructions
- Segment 2 medium oranges by cutting off the peel and membranes, then slice out each segment, collecting juices in a bowl; toss segments with a small pinch of salt.
- Toast 60 g (⅔ cup) sunflower seeds in a dry skillet over medium heat for 3–4 minutes, stirring every 30 seconds, until fragrant and lightly golden. Halve 200 g (2 cups) cherry tomatoes and slice 1 medium cucumber (150 g / 5 oz) into 5 mm (¼-inch) rounds.
- Whisk together 60 ml (¼ cup) olive oil, 30 ml (2 tbsp) lemon juice, 15 ml (1 tbsp) vinegar, 5 g (1 tsp) mustard, 10 g (2 tsp) honey, salt, and pepper until emulsified.
- In a large bowl, combine mixed greens, salted orange segments, sliced avocado, red onion, olives, and cherry tomatoes. Drizzle with 2–3 tbsp (30–45 ml) of dressing and gently toss until coated.
- Top the salad with crumbled feta and toasted sunflower seeds. Serve immediately, or place components separately if making ahead.
Notes
Avoid soggy greens by drying leaves thoroughly after washing. Store dressing and toasted seeds separately for best texture when making ahead.
