Description

A delicious and hearty vegetarian lasagna layered with fresh vegetables and cheese.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups marinara sauce
  • 2 cups spinach
  • 1 cup sliced mushrooms
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain.
  3. Mix ricotta cheese, spinach, oregano, garlic powder, salt, and pepper in a bowl.
  4. Spread a layer of marinara sauce in the bottom of a baking dish.
  5. Layer 3 noodles over the sauce, then half of the ricotta mixture, followed by mushrooms and a third of the mozzarella.
