Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh pineapple chunks
  • ½ cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a mixing bowl, combine brown sugar, soy sauce, olive oil, sriracha, garlic powder, ground ginger, salt, and black pepper. Stir until well mixed.
  2. Place the chicken breasts in the bowl with the marinade. Coat each piece thoroughly. Let it marinate for at least 15 minutes. If time allows, marinate for up to 2 hours in the refrigerator for deeper flavor.
  3. Heat a large skillet over medium-high heat. Add the marinated chicken breasts to the skillet, reserving any leftover marinade.
  4. Cook the chicken for about 5-7 minutes on each side or until golden brown and fully cooked (internal temperature should reach 165°F or 75°C).
  5. In the last 2 minutes of cooking, add the pineapple chunks to the skillet. Pour the reserved marinade over the chicken and pineapple.
  6. Allow the mixture to simmer for about 2-3 minutes, until the sauce thickens slightly and the pineapple warms.
  7. Remove from heat and garnish with chopped green onions and sesame seeds.
  8. Transfer to a serving platter and enjoy!
