- 4 boneless, skinless chicken breasts
- 1 cup fresh pineapple chunks
- ½ cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a mixing bowl, combine brown sugar, soy sauce, olive oil, sriracha, garlic powder, ground ginger, salt, and black pepper. Stir until well mixed.
- Place the chicken breasts in the bowl with the marinade. Coat each piece thoroughly. Let it marinate for at least 15 minutes. If time allows, marinate for up to 2 hours in the refrigerator for deeper flavor.
- Heat a large skillet over medium-high heat. Add the marinated chicken breasts to the skillet, reserving any leftover marinade.
- Cook the chicken for about 5-7 minutes on each side or until golden brown and fully cooked (internal temperature should reach 165°F or 75°C).
- In the last 2 minutes of cooking, add the pineapple chunks to the skillet. Pour the reserved marinade over the chicken and pineapple.
- Allow the mixture to simmer for about 2-3 minutes, until the sauce thickens slightly and the pineapple warms.
- Remove from heat and garnish with chopped green onions and sesame seeds.
- Transfer to a serving platter and enjoy!
