Description

A bold, satisfying Mediterranean-inspired salad featuring crispy golden halloumi, fluffy couscous, fresh vegetables, and a homemade spicy hot honey drizzle.


Ingredients

Scale
  • 1 cup couscous
  • 1 cup boiling water
  • 1 tbsp olive oil
  • Salt, to taste
  • 1/2 cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup pomegranate seeds (optional)
  • Zest and juice of 1 lemon
  • 1 block (approx. 8 oz) halloumi, sliced into 1/2-inch pieces
  • 1 tsp olive oil
  • 2 tbsp honey
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1 tsp apple cider vinegar

Instructions

  1. Combine couscous, oil, and salt in a bowl. Pour boiling water over top, cover, and let steam for 5 minutes. Fluff with a fork.
  2. Dice cucumber, bell pepper, and red onion. Toss with parsley, lemon zest, lemon juice, and couscous.
  3. Warm honey with red pepper flakes for 2–3 minutes. Stir in apple cider vinegar and set aside.
  4. Sear sliced halloumi in olive oil over medium heat for 2–3 minutes per side until golden and crispy.
  5. Divide couscous mixture into bowls, top with halloumi, drizzle generously with hot honey, and garnish with pomegranate seeds if desired.
