A bold, satisfying Mediterranean-inspired salad featuring crispy golden halloumi, fluffy couscous, fresh vegetables, and a homemade spicy hot honey drizzle.
Ingredients

- 1 cup couscous
- 1 cup boiling water
- 1 tbsp olive oil
- Salt, to taste
- 1/2 cucumber, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup pomegranate seeds (optional)
- Zest and juice of 1 lemon
- 1 block (approx. 8 oz) halloumi, sliced into 1/2-inch pieces
- 1 tsp olive oil
- 2 tbsp honey
- 1/2 tsp red pepper flakes (adjust to taste)
- 1 tsp apple cider vinegar
Instructions
- Combine couscous, oil, and salt in a bowl. Pour boiling water over top, cover, and let steam for 5 minutes. Fluff with a fork.
- Dice cucumber, bell pepper, and red onion. Toss with parsley, lemon zest, lemon juice, and couscous.
- Warm honey with red pepper flakes for 2–3 minutes. Stir in apple cider vinegar and set aside.
- Sear sliced halloumi in olive oil over medium heat for 2–3 minutes per side until golden and crispy.
- Divide couscous mixture into bowls, top with halloumi, drizzle generously with hot honey, and garnish with pomegranate seeds if desired.
Notes
- This salad is perfect for meal prep. <liYou can adjust the spice level by adding more or less red pepper flakes.
