Description
A bold and fiery Spicy Ginger Beef Stir Fry made with tender sirloin, fresh vegetables, and a glossy homemade sauce. Ready in 30 minutes—perfect for quick Asian dinners and healthier takeout-style meals at home.

- 350g (3/4 lb) sirloin steak, thinly sliced against the grain
- 5 tbsp neutral oil (avocado or vegetable)
- 1 large chunk fresh ginger, peeled and cut into matchsticks
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 medium onion, chopped
- 1 thumb-sized piece ginger, minced
- 3 cloves garlic, minced
- 1 large head broccoli, cut into florets
- 1 medium bunch spring onions, chopped
- 150g (1 packed cup) mangetout / snow peas
- Two large handfuls fresh baby spinach
- 1 tsp chili flakes (adjust to taste)
- 5 tbsp soy sauce
- 2 tbsp oyster sauce
- 2 tbsp Chinese rice wine (or stock substitute)
- 3 tbsp soft brown sugar
- 2 tbsp cornflour mixed with 2 tbsp cold water
Instructions
- Heat a wok over high heat. Add half the oil and sear the beef for 1–2 minutes per side. Remove and set aside.
- Add remaining oil, then stir fry ginger matchsticks for 1 minute until fragrant.
- Add onion, minced ginger, and garlic. Cook 2–3 minutes until softened.
- Add broccoli and mangetout, stir frying for 3–4 minutes.
- Toss in spring onions and spinach until wilted.
- Return beef to the pan and add chili flakes.
- Pour in the sauce mixture and stir as it thickens into a glossy glaze.
- Cook 1–2 minutes more, remove from heat, and serve immediately.
