- 3 ¼ cups all-purpose flour, plus extra for rolling
- 1 ½ tablespoons ground ginger
- 1 ½ teaspoons cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon nutmeg
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- ¾ cup light brown sugar, packed
- ½ cup molasses
- 1 large egg, room temperature
- 2 ½ cups powdered sugar
- 4 tablespoons warm water
- 2 tablespoons meringue powder
- ½ teaspoon cream of tartar
Instructions
- In a bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
- In a large bowl, beat butter, brown sugar, and molasses until light and fluffy. Add the egg and mix until combined.
- Gradually mix in the dry ingredients until a soft dough forms. Divide in half, wrap, and chill for at least 1 hour or overnight.
- Preheat oven to 350°F (175°C). Roll out dough on a floured surface to ¼-inch thickness. Cut shapes with cookie cutters and transfer to lined baking sheets.
- Bake 9–10 minutes, until edges are set but centers are soft. Cool on the sheet for 5 minutes, then transfer to a wire rack.
- Beat powdered sugar, water, meringue powder, and cream of tartar until smooth. Pipe and decorate cookies with icing and sprinkles once cooled.
