Ingredients

  • 3 ¼ cups all-purpose flour, plus extra for rolling
  • 1 ½ tablespoons ground ginger
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ¾ cup light brown sugar, packed
  • ½ cup molasses
  • 1 large egg, room temperature
  • 2 ½ cups powdered sugar
  • 4 tablespoons warm water
  • 2 tablespoons meringue powder
  • ½ teaspoon cream of tartar

Instructions

  1. In a bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Set aside.
  2. In a large bowl, beat butter, brown sugar, and molasses until light and fluffy. Add the egg and mix until combined.
  3. Gradually mix in the dry ingredients until a soft dough forms. Divide in half, wrap, and chill for at least 1 hour or overnight.
  4. Preheat oven to 350°F (175°C). Roll out dough on a floured surface to ¼-inch thickness. Cut shapes with cookie cutters and transfer to lined baking sheets.
  5. Bake 9–10 minutes, until edges are set but centers are soft. Cool on the sheet for 5 minutes, then transfer to a wire rack.
  6. Beat powdered sugar, water, meringue powder, and cream of tartar until smooth. Pipe and decorate cookies with icing and sprinkles once cooled.
