- 4 boneless, skinless chicken breasts
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (8 ounces) tomato sauce
- 1 cup heavy cream
- 1 cup fresh basil leaves, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- Grated Parmesan cheese (for serving, optional)
Instructions
- Spray the inside of your slow cooker with cooking spray or lightly coat it with olive oil.
- Place the chicken breasts at the bottom of the slow cooker.
- In a bowl, combine the diced tomatoes and tomato sauce. Add garlic powder, onion powder, salt, and pepper, then mix well.
- Pour the tomato mixture over the chicken breasts, ensuring they are well coated.
- Pour the heavy cream over the tomato mixture. Do not stir; allow the cream to sit on top.
- Sprinkle the chopped basil on top of everything in the slow cooker.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through.
- Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
- Allow the dish to cook for an additional 10 minutes to heat thoroughly.
