  • 1 tablespoon ground cumin

  • 1 teaspoon cayenne pepper (optional)
  • 4 cloves garlic, minced
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 1 onion, sliced
  • Fresh parsley, chopped (for garnish)
  • Pita bread or rice (for serving)
  • Sliced cucumbers, tomatoes, and red onions (for toppings)

Instructions

  1. Trim any excess fat from the chicken thighs and place them in the slow cooker.
  2. In a bowl, combine cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, minced garlic, lemon juice, and olive oil. Whisk until well mixed.
  3. Pour the spice mixture over the chicken thighs, ensuring they are fully coated. Add salt and pepper to taste.
  4. Layer the sliced onion on top of the chicken in the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 4 hours.
  6. Once cooked, remove the chicken from the slow cooker and shred it using two forks.
