Description

A bright, creamy, and smoky Keto White Chicken Chili that keeps carbs low by replacing beans with riced cauliflower while delivering classic white-chili flavors.


Ingredients

  • 700 g boneless skinless chicken thighs
  • 30 ml olive oil
  • 150 g yellow onion, chopped
  • 12 g garlic, minced
  • 200 g roasted green chiles, chopped
  • 960 ml low-sodium chicken broth
  • 200 g riced cauliflower
  • 113 g cream cheese, full-fat
  • 120 ml heavy cream
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1 lime, zest and juice
  • Salt and black pepper to taste
  • 15 g fresh cilantro, chopped
  • Optional toppings: shredded cheddar, sliced jalapeños, avocado chunks, sour cream or Greek yogurt

Instructions

  1. Season and brown the chicken: Pat chicken dry, season with salt and pepper, heat oil in a pot and brown thighs for 3–4 minutes on each side.
  2. Sweat the aromatics: Add onion and sauté for 5 minutes, then add garlic and cook for another 30–45 seconds.
  3. Toast the spices and add chiles: Stir in spices, toast briefly, then add roasted green chiles.
  4. Deglaze and simmer the chicken: Pour in chicken broth, bring to a simmer, and return browned chicken to the pot. Cover and simmer for 12–14 minutes.
  5. Shred the chicken and add cauliflower: Transfer chicken to shred and add riced cauliflower to the pot, simmer for 4–5 minutes.
  6. PURÉE for body and finish with cream: Remove some broth, blend until smooth, then stir in cream cheese and heavy cream.
  7. Brighten, season, and serve: Stir chicken back in, heat through, and finish with lime zest, juice, and chopped cilantro.

Notes

For spicier flavor, try adding cayenne or jalapeños as toppings. Store leftovers in airtight containers for up to 3 days or freeze for up to 3 months.
