- 1 pound Italian sausage (mild or spicy, based on your preference)
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups kale or spinach (optional, for added nutrition)
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces with a wooden spoon.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.
- Stir in the diced potatoes and cook for another 2-3 minutes.
- Add the chicken broth, thyme, rosemary, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat to low and let the soup simmer for about 20 minutes, or until the potatoes are tender.
- Once the potatoes are cooked, stir in the heavy cream and cook for an additional 5 minutes to heat through.
- If using, add the kale or spinach and let it wilt in the hot soup for a few minutes.
- Taste and adjust the seasoning with more salt and pepper if needed.
