  • 1 pound Italian sausage (mild or spicy, based on your preference)
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups kale or spinach (optional, for added nutrition)
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces with a wooden spoon.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the diced potatoes and cook for another 2-3 minutes.
  4. Add the chicken broth, thyme, rosemary, salt, and pepper. Bring the mixture to a boil.
