- 1 rotisserie chicken, shredded
- 6 cups chicken broth
- 2 cups egg noodles
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 teaspoon dried thyme (or to taste)
Instructions
- Remove the skin from the rotisserie chicken and shred the meat into bite-sized pieces.
- In a large pot, pour in the chicken broth and bring it to a boil over medium-high heat.
- Once boiling, add the mixed vegetables to the pot and cook for about 5 minutes until they start to soften.
- Add the egg noodles to the pot and cook for another 5-7 minutes, or until they are tender.
- Stir in the shredded rotisserie chicken and dried thyme. Cook for an additional 2-3 minutes to heat the chicken through.
- Taste the soup and adjust the seasoning if necessary, adding salt and pepper as desired.
- Remove from heat and ladle the soup into bowls.
