Ingredients

  • 1 rotisserie chicken, shredded
  • 6 cups chicken broth
  • 2 cups egg noodles
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 teaspoon dried thyme (or to taste)

Instructions

  1. Remove the skin from the rotisserie chicken and shred the meat into bite-sized pieces.
  2. In a large pot, pour in the chicken broth and bring it to a boil over medium-high heat.
  3. Once boiling, add the mixed vegetables to the pot and cook for about 5 minutes until they start to soften.
  4. Add the egg noodles to the pot and cook for another 5-7 minutes, or until they are tender.
  5. Stir in the shredded rotisserie chicken and dried thyme. Cook for an additional 2-3 minutes to heat the chicken through.
  6. Taste the soup and adjust the seasoning if necessary, adding salt and pepper as desired.
  7. Remove from heat and ladle the soup into bowls.
