Instructions
- Preheat oven to 400°F (200°C). Line two large baking sheets with parchment paper. Wash and slice sweet potatoes into uniform 1/4 to 1/3 inch rounds. In a large bowl, toss sliced sweet potatoes with olive oil, salt, black pepper, and smoked paprika until evenly coated.
- Arrange seasoned sweet potato rounds in a single layer on the prepared baking sheets, ensuring not to overcrowd. Roast for 15 minutes. Flip each round and continue roasting for another 10-15 minutes, or until tender and golden-brown with slightly crispy edges.
- While sweet potatoes roast, crumble the feta cheese, measure out the honey (gently warm if too thick), and finely chop the fresh parsley.
- Once roasted, transfer the warm sweet potato rounds to a serving platter. Generously sprinkle with crumbled feta cheese. Drizzle the honey over the feta-topped rounds, then garnish with chopped fresh parsley. Serve immediately for the best texture and flavor.
